Almost identical to our Iberico Pork Secreto is our Iberico Pork Belly Filet. Coming from the belly and carrying an incredible amount of marbling, this cut is about 1-1.5 pounds and is typically thinner than the secreto, making for a faster cook time and better sear - all while being less expensive than the Secreto itself.                              
                                   

All Second City Prime Steak & Seafood Company products come individually vacuum sealed and frozen - guaranteed in your freezer for 6-12 months.

Cut: From the belly - in between all that fat

Preferred Cooking Method: Second City Prime's preferred cooking method for the Pork Belly Filet is to grill it on high heat! Set grill to 400 degrees fahrenheit. To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat, it's thin so it'll be fast! After doing so we recommend cutting is against the grain in small pieces to use for fajitas or tacos. 

Preferred Cooking Time: The Pork Belly should be grilled on high heat (400 degrees) for 1-2 minutes a side or until it reaches an internal temperature of 145 degrees fahrenheit.
