Preferred Cooking Method: Second City Prime's preferred cooking method for the Australian Wagyu Picanha is slow roasting in the oven or sous-vide. The optimal oven temperature is 250 degrees fahrenheit. To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat.

Preferred Cooking Time: The Australian Wagyu Picanha should be pan seared over medium heat. Cook the fat side for 20 minutes and flip it over, allow 2 minutes for it to turn golden. Transfer into a baking pan and leave it in the oven for 60 minutes or until it reaches an internal temperature of 130 degrees fahrenheit.
